Gaetano Sergiacomo, nonno materno degli attuali titolari d’azienda Gianluigi e Maria Stefania Peduzzi, nonché figlio di famosi mugnai che operavano nell’area Vestina, decise nel 1924 di separarsi dall’azienda di famiglia e dall’attività molitoria, fondando così il Pastificio Gaetano Sergiacomo a Penne. Da allora, la pasta di Gaetano “Tanuccio” Sergiacomo è sempre stata considerata la migliore, ricevendo ampie conferme anche fuori dall’Abruzzo; la Nostra Tradizione è ancora ben radicata dopo quattro generazioni: per noi, produrre pasta è un’arte antica, eredità della storia e della cultura della nostra Terra Natia. Rustichella d’Abruzzo usa esclusivamente il miglior Grano Duro con un più alto tasso di glutine, miscelato con pura acqua di montagna per dare alla pasta quel gusto e quella consistenza unici. Le preziose trafile di bronzo rendono la superficie della pasta ruvida abbastanza da trattenere ogni tipo di condimento. Il processo di essiccazione è compiuto lentamente e a basse temperature, anche fino a 50 ore e a circa 35°C, a differenza del metodo industriale che avviene a 90°C per 4/5 ore. In Abruzzo, the Green Heart of Europe, Rustichella d’Abruzzo craftsmen only use the finest natural ingredients to prepare, with care, pasta made from durum wheat semolina in both traditional and special formats. Gaetano Sergiacomo, maternal grandfather of the current factory owners Gianluigi and Maria Stefania Peduzzi and son of famous millers that worked in the Vestina area, decided in 1924 to separate from the family factory and the milling business, thus founding the Pastificio Gaetano Sergiacomo in Penne. Since then, Gaetano “Tanuccio” Sergiacomo’s Pasta has always been considered the best one, receiving a lot of appraisal from people in Abruzzo and outside; Our Tradition still stands after four generations: to us, producing pasta is an antique art, heritage of history and culture of our Homeland. Rustichella d’Abruzzo exclusively uses the best durum wheat semolina, with a higher gluten rate, kneaded with pure mountain water to give unique taste and consistency to the pasta. The precious bronze dies make the pasta surface rough enough to hold every kind of sauce. The drying process is carried out slowly and at low temperatures, up to 50 hours and around 35°C, contrarily to the industrial method that is carried out at 90°C for 4/5 hours.
